Ottolenghi is a great fan of our Black Garlic and has created many recipes including Aubergine with Black Garlic, Ottolenghi states ” It is also very complementary to the roasted aubergine; they are both rich flavours, but with the yogurt there is a nice, sharp acidity.”
Ottolenghi also has a great idea for livening up your vegetables.
“Take a bunch of herbs – parsley, coriander – then mix with lemon juice and olive oil into a thick paste and brush your vegetables with it before you put them in your grill pan.
Black Garlic has featured in both Plenty more and Nopi and as it enjoys its new found fame Black Garlic recipes appear to be popping up more and more with Vegetables as the key ingredient and some delicious combinations.
